I'm new to all this
I have found lots of info on how clocks work
But I cannot find any info on how the cuckoo actually works
Or how a chime works
Can someone point me in the right direction

Many books have been published on the subject of clock mechanisms, including cuckoo clocks and chime clocks.
There are video courses offered for sale on eBay (and probably elsewhere) on basic and advanced clock repair. Operation of movements is also covered in these courses.
What many people have done who are fascinated by clocks is to pick up an inexpensive clock at a flea market or garage sale and take it apart to see how it operates.
