I HAVE A COO COO CLOCK WHICH I THINK WAS MADE IN THE LATE 1800'S. THE MECHANISM HAS G.H.S. STAMPED ON IT. THE CLOCK WORKS BUT HAS SOME OF THE WOODEN LEAVES AROUND IT MISSING. I WOULD LIKE TO KNOW MORE ABOUT THIS CLOCK AND IF SOMEONE KNOWS A GOOD RESTORER WHO CAN REPLACE THE MISSING LEAVES.

I suspect that the GHS probably stands for Georg Hettich & Sohne. They were known Black Forest cuckoo clock makers.
However, as far as additional information is concerned I'd suggest you look for a copy of "Black Forest Clockmaker & the Cuckoo Clock" by Karl Kochmann. It covers many cuckoo clock makers as well as illustrations of styles of cuckoo clocks and clock cases. The book is still in print and should be available from any good bookseller, Amazon.com, or from a library if you don't wish to buy it. Many libraries will obtain a copy for you through inter-library loan if they don't have it on their shelves.
