Helllo, I've got an old clock that needs fixed.
basically I've never done this before...

I've got my hands picked out but I'm not sure what movement parts to use..
will all hands work on any movement piece?
theres so many different types of movements like high torque? no idea what i need..

any suggestions on where i should start?

If you are seriously seeking assistance, then I would love to help. There are lots of movements, but movements can be broken down into two main categories: 1.) Battery operated (Quartz) movements; 2.) Mechanical movements. Of course, there are different offerings in each category, but we would need more information before we could determine which movement was right for your assembly. It would help to know what kind of clock you have (mantel? wall? floor clock?). It would help to know what type of movement you are interested in (quartz or mechanical)? From that point, we can look at options. Do you want a movement that chimes? Does it require a pendulum?

Side note: A majority of hands offered will fit most quartz movements (the only exception are push-on hands). Mechanical movement hands are included with the movement (so no need to purchase hands separately). High torque quartz movements are only used when you would need a minute hand length that is longer than 7". These are for larger wall type clocks primarily (where more power is required to drive large counter-balanced [but light-weight] aluminum hands).
